French Onion Ground Beef and Rice Casserole

This French Onion Ground Beef and Rice Casserole has become a staple in my meal rotation. It’s hearty, packed with flavor, and ridiculously easy to throw together. With savory ground beef, rich French onion soup, melty provolone, and a blend of rice and cauliflower rice, it’s a one-pan wonder that delivers serious flavor without requiring hours in the kitchen.

Ingredients

  • 1 lb ground beef
  • 1 package Uncle Ben’s jasmine rice
  • 1 package cauliflower rice
  • 1 can French onion soup
  • 4 slices provolone

Instructions

  • In a Carote Detachable Handle Skillet, cook the ground beef over medium heat until fully browned, breaking it up as it cooks. Drain excess fat if necessary.
  • Add the cauliflower rice to the skillet and cook for a few minutes until softened.
  • Prepare the jasmine rice according to the package instructions.
  • Stir the cooked jasmine rice and French onion soup into the skillet with the beef and cauliflower rice, mixing well. I suggest starting with 1/2 can then adding additional as the rice soaks up the soup.
  • Lay the provolone slices over the top and cover with a lid until melted, or broil in the oven for a few minutes for a golden, bubbly finish.
  • Serve hot and enjoy!
